Halloumi is a semi-hard cheese from Cyprus, traditionally made from a blend of cow, goat, and sheep milk. Dodoni's version is delicately flavored with mint and is perfect for grilling or frying. In Cyprus, halloumi is a typical everyday dish—often served with a fried egg for breakfast or enjoyed as a savory snack.
Its special characteristic: Halloumi doesn't melt when heated and retains its shape beautifully. Cut it into finger-thick slices and fry or grill it without any additional seasoning – ideally in hot olive oil. Only at high temperatures does it fully develop its typical texture and delicate mint aroma.
